Hickory Smoked Sausage Links

Ingredients: Pork, salt, water, red pepper, sage, black pepper, sugar, sodium nitrite, natural hog casing.
Storage: Refrigerate upon receipt.
Preparation: Cooking is required.
Fry: Split sausage lengthwise. Fry at 350 degrees F. for 5 minutes. Turn once, cook an additional 5 minutes.
Grill: Split sausage lengthwise. Set grill to medium heat at 350 degrees F, cook for 5 minutes on each side.
Steam: Add about 1/8 cup water to 350 degree F. covered frying pan or electric skillet. Simmer for 10 minutes with lid on. Remove lid and continue cooking until water has evaporated and sausage is nicely browned.
Microwave: Split sausage lengthwise. Cook on high heat for 1-2 minutes, depending on your microwave. To cook sausage whole, puncture with fork before heating.
Shelf Life: 10 days without refrigeration, 4-6 weeks refrigerated, 3 months frozen.

As a child back in the 1950s and 60s, I used to go to a convenience store in the small town in SC where I lived that sold sausage dogs from smike sausage that was made locally. That convenience store and the meat market that made the sausage have long been out of business. As an adult, I craved those sausage dogs. On various trips whenever I would see a sign out for a place that sells sausage dogs, I would often stop and try them and always disappointed because it didn't taste as good as what that sausage dog did as a child. About 25 years ago when visiting the Williamsburg area, we took a ferry across the James River heading home, landing near Surry, Va. Saw your store, went in, and bought some of your smoked sausage and was absolutely delighted as I finally found the taste that I was looking for. I have continued to order from you every year since. Though there was a number of years where Fresh Market carried your product in their store, and I just bought from them. So glad you're still in business and making those yummy smoked sausages!

In my opinion, these are hands-down the most delicious pork sausages available anywhere. They have a real "snap" to them that compliments the whole experience and the flavor profile is just a wee bit peppery with a truly perfect balance of smoky, salty, Southern nostalgia. I honestly can not say enough good things about this sausage. Support this amazing old time company, won't you. They suffered a catastrophic loss in early 2016 and still have not been paid out on their insurance claim. It is only through love, hard work, determination and the help of other area producers that they have been able to save this third generation family business. If these endangered culinary treasures disappear, we will never again be able to taste these amazing heritage foods.
