Product Preparation

Q: How do you recommend thawing a frozen ham?
A:

Place ham in the refrigerator and allow thawing slowly for 3-5 hours per pound. Do not thaw at room temperature. For additional details on storing and preparing hams, see Store & Cook tab on each individual product page. If you are in a hurry to thaw the product, use your microwave following the directions of the microwave manufacturer. Most microwaves have a defrost mode based on the pounds needed to thaw.

Q: What’s the best way to cook a country ham?
A:

We believe simmering produces the best-tasting country ham. After washing and soaking your ham, fully submerge it in a large pan of cold water. Bring water to a slow simmer (NOT boil) and maintain for 20-25 minutes per pound (Example: 5 hours for 12 lb. ham) or until internal ham temperature reaches 160 degrees F. Add water as needed to keep ham submerged. When fully cooked, remove ham from pan and, while still warm, remove skin and trim excess fat. Apply glaze if desired.

For additional details on storing and preparing hams, visit the Store & Cook tab on each online product page. You may also view the instructional videos for cooking, carving, and glazing an Edwards Virginia Ham.

Q: How do I prepare an Edwards Tender Smoked Ham?
A:

Wrap in heavy foil. Cook in oven at 325 degrees F., fat side up for 18-20 minutes per pound (approx. 6 hours) or until internal temperature reaches 160 degrees F.

For additional details on storing and preparing Tender Smoked Hams, view Store & Cook tab displayed on Tender Smoked Ham product page.

Q: How should I store an uncooked ham I’ve already sliced?
A:

Tightly wrap your uncooked sliced ham in foil and store in refrigerator. (Refrigeration helps prevent formation of mold.) For longer storage, your foil-wrapped ham may be stored in your freezer for up to 6 months.

For additional details on storing and preparing hams, see Store & Cook tab on each online product page.

Product Information

Q: What is the white material on the ham I received?
A:

This is perfectly harmless mold that appears on uncooked country hams as a natural result of the aging process. Remove it before cooking by washing the ham surface with hot water and a stiff brush.

Q: The product I received came without ice & is warm to the touch. Is it safe to eat?
A:

Yes, our non-perishable and semi-perishable products (e.g., cooked & uncooked smoked hams, sausage, bacon, etc.) are completely safe for up to 10 days without refrigeration.

Perishable products (such as spiral-sliced hams, seafood, fresh sausage, and turkey breast and pork loins) are shipped frozen for arrival within 2 days or less. Identified with red & blue airplane symbols in product descriptions, these items are shipped frozen in coolers with ice. If you receive perishable products that have partially thawed, simply put them in your freezer to refreeze. Perishable ham, sausage or turkey may be stored in your refrigerator for up to 2 weeks without refreezing.

Q: The cooked ham I received was wet. Why?
A:

This natural moisture results from our ham cooking process. Placing the ham in its cooking bag and cooking it in hot water sometimes causes moisture to leach from the ham into the cooking bag. This is not harmful in any way.

Q: Where can I find nutritional information about your products?
A:

On each online product page, there’s a tab marked Nutritional Facts. Click this tab to read a complete listing of ingredients and nutritional values. This same information is also printed on individual product labels.

Q: The ham I cooked tastes too salty. Can I reduce the salt intensity?
A:

A too-salty country ham taste is usually the result of cutting ham slices too thick. With its natural flavor intensity, country hams must be sliced paper-thin to properly present their uniquely American flavor profile. To ease thin-slicing, use a very sharp knife. If flavor is still to salty, consider adding a brown sugar or honey glaze.

For additional details on cooking and slicing ham, visit Cooking Info.

Q: If I buy a whole ham, can you slice it for me?
A:

Sorry no, but we offer a broad selection of pre-sliced & conveniently packaged ham products, including Spiral Sliced Hams,Surryano slices, cooked and uncooked Virginia ham slices, an uncooked and slicedhalf ham, and slices with biscuits.

Q: What are the facts on nitrates?
A:

We use a pinch of nitrates in our dry-cured meats to prevent spoilage and help make the meat even safer for human consumption. There's been much debate on the health factors regarding nitrates, however multiple studies have shown that foods containing nitrate are perfectly safe. Click here if you'd like to learn more about nitrates.

Q: Where are your products being made since you lost your buildings in the fire?

A: We've reached out to our friends in the dry cured meat community to develop products for us until we can get back on our feet and they strive to meet our flavor expectations every day. We're working with our fellow charcuterie makers in North Carolina, Alabama, Tennessee, Kentucky and Missouri to continue to deliver country hams, bacon and sausages to you and your family.
